A coastal perspective.
Nova Scotia’s seafood kitchens form part of my culinary story. Delicate textures, measured seasoning, and the lift of citrus and herbs offer a language for food that feels bright and balanced.
THE TASTING SPOONCATERING · VANCOUVERTHE PERSON BEHIND THE SPOON
Tanishq Bajaj · Chef behind The Tasting Spoon
I’m the chef behind The Tasting Spoon, and the part of cooking I enjoy most is sharing it with people. A beautifully presented plate is a lovely beginning, but seeing someone enjoy that first bite is what makes the work meaningful to me.
My journey has taken me through Toronto’s fine dining scene, seafood restaurants in Nova Scotia, and Fairmont hospitality. Each setting has added something to the way I think about food: balancing flavours, paying attention to texture, and remembering that the person at the table matters as much as what’s on the plate.
I started The Tasting Spoon to bring that experience to your own gatherings. Whether it’s a celebration, a meal with friends, or an occasion you’ve been looking forward to, I’d love to hear what you have in mind. Tell me about the food you enjoy, the people you’re bringing together, and the feeling you want to create. That’s where we begin.
I look forward to cooking for you.

GOOD FOOD. BEAUTIFUL GATHERINGS.
THE JOURNEY BEHIND THE CHEF
My culinary foundation began with Culinary Management studies at George Brown College in Toronto. Moving between fine dining, coastal kitchens, and hotel hospitality has helped me see how technique and care come together to create an enjoyable meal.
Along the way, I’ve become more thoughtful about the decisions that give a dish its character: seasoning with intention, balancing richness with acidity, layering texture, and knowing when an ingredient needs room to speak for itself.
The Tasting Spoon is a personal expression of that growth. It’s a place to bring my influences together, keep exploring, and share food that feels right for the people enjoying it.
Bring your occasion to the table ↗THE FLAVOURS THAT SHAPE MY COOKING
Nova Scotia’s seafood kitchens form part of my culinary story. Delicate textures, measured seasoning, and the lift of citrus and herbs offer a language for food that feels bright and balanced.
French influences and fine dining inform an appreciation for composition: contrasting textures, considered garnishes, and canapés and tea sandwiches that deliver flavour in a small, elegant bite.
Canadian flavours, American fusion, and food from the grill bring another dimension: savoury depth, a touch of char, and the generous appeal of dishes made to share.
A CRAFT THAT KEEPS EVOLVING
For me, growth means staying curious: tasting thoughtfully, refining a flavour combination, listening to guests, and approaching familiar ingredients with fresh attention. I want my cooking to balance care and creativity with the simple enjoyment of a good meal.
That spirit carries into The Tasting Spoon. Your tastes and your occasion help shape the conversation, whether you imagine delicate canapés, a generous shared spread, or flavours with a little more fire.
Beautifully composed, full of flavour, and made to be enjoyed together.
